One of our favorite recipes for over 30 years now is Mizidra which is gluten-free and vegan! It is an easy crowd-pleaser for company! I have never had anyone NOT like it! Think Middle Eastern Tostada with rice as the tortilla!
First, cook a pot of lentils…
Adding marjoram and thyme are key to giving these lentils amazing flavor. While your lentils are cooking, also cook a pot of brown rice.
You can use white rice but I like the extra nourishment and flavor of short grain brown rice.
On your plate, layer rice, then lentils, then whatever you would normally put on a tostada…shredded lettuce, sweet onions, chopped tomatoes, sliced olives, chopped avocado, salsa, sour cream or plain yogurt!
Oh. My. Yum! I could eat this every week for the rest of my life! Oh wait! We nearly do that now:)))

from Recipes from the Weimar Kitchen cookbook
- 2 dry lentils
- 4 cups water
- 1 small onion, chopped
- 1 tsp. chicken-style seasoning
- 1 Tbsp Gluten Free Tamari Sauce (or soy sauce if not gluten free)
- 1 tsp. marjoram
- 1/8 tsp. thyme
- 1 bay leaf
Bring above ingredients to a boil on the stove then reduce heat and simmer till done (about an hour).
- 2-3 cups cooked brown rice
- chopped sweet onion
- shredded lettuce
- chopped tomatoes
- chopped avocado
- chopped olives
- salsa
- sour cream or plain yogurt (I use tofu sour cream)
Assemble ingredients on individual plates as you would a tostado:
- first layer–rice
- second layer–lentils
- then chopped onion, lettuce, tomato, etc.
- top with salsa and sour cream
